Hamburger Quesadillas


  • 1 lb. ground beef
  • 1 green pepper
  • 1/2 of an onion
  • 1/2 of a teaspoon of oregano
  • 1/2 teaspoon of cumin
  • 1 1/2 teaspoon of chili powder
  • 1 (8.5 oz.) can of corn drained
  • 1 (15 oz.) can of black beans drained and rinsed
  • 1 package of large flour tortillas
  • 2 cups of shredded cheddar cheese
  • sour cream (optional for serving)
  • guacamole (optional for serving
  • salsa (optional for serving)


  1. Brown the hamburger and drain off the excess fat.
  2. Chop up the onion and green pepper and add to browned hamburger.
  3. Add the 1/2 teaspoon of salt, 1/2 teaspoon of oregano, 1/2 teaspoon of cumin, and 1 1/2 teaspoons of chili powder.
  4. Drain the corn and add it to the ground beef.
  5. Drain and rinse the can of black beans and add them to the ground beef.
  6. Warm the mixture over medium heat until fully heated.
  7. Place tortilla in a large pan. Cover with shredded cheddar cheese.
  8. Cover one half of tortilla with hamburger mixture.
  9. Fold over and heat first side a couple of minutes until it is lightly browned, then flip it over and brown the other side.
  10. Cut quesadilla into four triangles and serve with salsa, guacamole, or sour cream.
