Blueberry Bars

  • 1 cup butter
  • 1 3/4 cup sugar
  • 4 eggs
  • 1 tsp. vanilla
  • 3 cups flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 (21 oz.) can of blueberry pie filling

  • Powdered Sugar Frosting
  • -------------------------------------
  • 1 tsp. butter
  • 1/4 cup milk
  • 1 tsp. vanilla
  • 2 cups powdered sugar


  1. Preheat your oven to 350 degrees. Then soften 1 cup of butter in a bowl. When the butter is softened, mix in 1 3/4 cups of sugar. Then mix in 4 eggs. Add 1 teaspoon of vanilla. In a separate bowl mix together the dry ingredients: 3 cups of flour, 1 1/2 teaspoons of baking powder, and 1/2 teaspoon of salt. Then slowly mix it together with the sugar mixture. Spread it in a greased 11"x15" inch jelly roll pan or a shallow baking pan. Spoon 1 can of blueberry pie filling on top of the batter. Bake for 40 minutes. While the bars are still warm, drizzle them with powdered sugar frosting.
  2. To make this frosting, you need to combine 1 tablespoon of butter, 1/4 cup of milk, and 1 teaspoon of vanilla in a pan on the stove and heat until the butter is melted. Then in a bowl place the 2 cups of powdered sugar and slowly add the warm liquid to the powdered sugar one teaspoon at a time. This recipe makes quite a bit of frosting so you may have some left over.
