Best Cheesy Shrimp Garlic Bread



  1. 1 loaf ciabatta, halved lengthwise
  2. 2 tbsp. unsalted butter
  3. 1 1/2 lb. large shrimp, peeled and deveined
  4. kosher salt
  5. Freshly ground black pepper
  6. 2 tomatoes, diced
  7. 3 cloves garlic, minced
  8. 1/4 c. mayo
  9. 1 tbsp. fresh lemon juice
  10. 1 tsp. fresh lemon zest
  11. 1 c. shredded mozzarella, divided
  12. 1/2 c. grated parmesan, divided
  13. Chopped fresh parsley, for garnish


  1. Preheat oven to 375º. In a large skillet over medium heat, melt butter. Add shrimp and season with salt and pepper.
  2. Cook until pink and cooked through, 3 to 4 minutes, then stir in tomatoes and garlic and cook until fragrant, 1 minute more.
  3. Remove from heat and when cool enough to handle, chop into bite-size pieces.
  4. Transfer to a large bowl and mix with mayo, lemon juice and zest, ½ cup mozzarella, and ¼ cup Parmesan.
  5. Season with more salt and pepper.
  6. Spread shrimp mixture onto bread and top with remaining mozzarella and Parmesan.
  7. Bake until bread is crispy and cheese is bubbly and golden, 15 to 20 minutes.
  8. Garnish with parsley and slice.
